Tenderloin Steaks with Merlot Sauce

Ingredients

  • 1-2 tsp black pepper
  • 4 filets
  • 1 tbsp olive oil
  • 1/2 cup chopped onion
  • 1 medium shallot, chopped
  • 1 tbsp fresh thyme
  • 1/2 cup Merlot
  • 2 tbsp beef broth
  • 1 tbsp balsamic vinegar
  • 1/8 tsp salt

Directions

  1. Use your fingers to press pepper onto both sides of steaks. In a large skillet cook steaks in hot oil over medium heat to desired doneness, turning once. 10-13 minutes for medium rare.

  2. For sauce, add onion and shallot to drippings in skillet. Cook and stir for 4-6 minutes or until onions are tender. Add Merlot and broth. Bring to boiling; reduce heat. Boil gently for 3-5 minutes or until mixture is reduced by half. Stir in vinegar and thyme. Season with salt. Spoon sauce over steaks.
