Ingredients
- 1-2 tsp black pepper
- 4 filets
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 1 medium shallot, chopped
- 1 tbsp fresh thyme
- 1/2 cup Merlot
- 2 tbsp beef broth
- 1 tbsp balsamic vinegar
- 1/8 tsp salt

Use your fingers to press pepper onto both sides of steaks. In a large skillet cook steaks in hot oil over medium heat to desired doneness, turning once. 10-13 minutes for medium rare.

For sauce, add onion and shallot to drippings in skillet. Cook and stir for 4-6 minutes or until onions are tender. Add Merlot and broth. Bring to boiling; reduce heat. Boil gently for 3-5 minutes or until mixture is reduced by half. Stir in vinegar and thyme. Season with salt. Spoon sauce over steaks.
