Ingredients
- 4-6 cups mesquite wood chips
- 4-5 lb beef brisket
- 1 tbsp cooking oil
- 2 tbsp paprika
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tsp cayenne pepper
- 1 tsp dried thyme
- 3 cups bottled BBQ

At least 1 hour before grilling, soak wood chips in enough water to cover.

Trim fat from brisket. Brush brisket with oil. For rub, in a small bowl stir together paprika, salt, black pepper, cayene pepper and thyme. Sprinkle rub evenly over all sides of meat; rub in with your fingers.

Preheat grill. Reduce heat to low. Add wood chips. Place meat on a rack in a roasting pan; place pan on grill rack over burner that is off. Grill for 3- 3 3/4 hrs. Add more wood chips every 30 minutes.

Meanwhile, warm BBQ in a saucepan over low heat. Let meat stand for 10 minutes. To serve, slice meat thinly across the grain. Serve with BBQ sauce.
