Steak with Creamy Horseradish Sauce

Ingredients

  • 2-2 1/2 lb beef sirloin steak
  • 3/4 tsp ground cumin
  • 1/2 tsp black pepper
  • 4 garlic cloves, minced
  • 6-8 oak wood chunks
  • Creamy horseradish sauce*** (recipe below)

Directions

  1. Trim fat from steak. Place steak in a shallow dish. For rub, in a small bowl combine cumin, pepper, 1/2 tsp salt and garlic. Sprinkle rub evenly over one side of steak; rub in. Cover and chill for 1-4 hrs.

  2. At least 1 before smoke cooking, soak wood chunks in water.

  3. In a smoker, arrange preheated coals, wood chunks and water pan. Pour water into pan. Place steak, seasoned side up, on the grill rack over water pan. Cover and smoke about 2 hours (150).

  4. To serve, thinly slice steak across the grain and serve with creamy Horseradish sauce.


  5. Creamy Horseradish: In a small bowl stir together 1/3 cup sour cream, 2 tbsp Dijon, 1 tbsp fresh chives, and 2 tsp horseradish. In a chilled mixing bowl beat 1/4 cup whipping cream on medium speed until soft peaks form. Fold whipped cream into sour cream mixture.
