Ingredients
- 3 lbs chicken breasts
- 1/2 cup tomato juice
- 1/3 cup chopped onion
- 2 tbsp water
- 2 tbsp lime juice
- 1 tbsp cooking oil
- 1 tbsp Pickapeppa sauce
- 1/2 tsp salt
- 4 garlic cloves, minced
- 6/8 fruit wood chunks
- 1-2 tsp Jamaican jerk seasoing
- Lime wedges

Place chicken in a plastic bag. For marinade, in a bowl combine tomato juice, onion, water, lime juice, oil, Pickapeppa sauce, salt and garlic. Pour over chicken; seal bag. Marinate in the fridge for 1-4 hrs, turning bag occasionally.

At least 1 hr before smoking, soak wood chunks in water. Drain chicken, discarding marinade. Sprinkle jerk seasoning evenly over chicken; rub in.

In a smoker, place chicken, bone sides down, on the grill rack over water pan. Cover and smoke for 1 1/2-2 hrs (170). Serve chicken with lime wedges.
