Smoked Garlic Chicken

Ingredients

  • 10-12 apple wood chunks
  • 6-7 lb whole roasting chicken
  • 1 lemon
  • 2 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 garlic cloves, minced

Directions

  1. Rinse the inside of the chicken, pat dry with paper towels. Finely shred enough peel from the lemon to equal 2 tsp. For rub, in a small bowl combine lemon peel, parsley, salt, pepper and garlic. Halve the lemon. Squeeze the juice from one half over the entire surface of the chicken. Sprinkle rub evenly over chicken; rub in. Place both lemon halves in the chicken cavity. Skewer the neck skin to the back. Tie legs to tail. Twist wing tips under back.

  2. Insert meat thermometer into center of inside thigh muscle.

  3. In a smoker, place chicken, breast side up. Cover and smoke 3 1/4-4 hrs, or until 180.

  4. Remove chicken from smoker. Cover with foil and let stand 15 minutes. Remove and discard lemon halves from chicken before serving.
