Ingredients
- 8 cups Italian bread cubes
- 1 medium red sweet pepper, chopped
- 1 medium chopped onion
- 3 garlic cloves, minced
- 1/4 cup olive oil
- 1 tbsp lemon juice
- 1 tsp dried rosemary
- 1/8 tsp cayenne pepper
- 1/4 cup fresh parsley
- 1 to 1 1/4 cups chicken broth

Place bread cubes in a single layer in a 15×10×1-inch baking pan. Bake at 375 about 10 minutes or until golden, stirring once; set aside. Reduce oven to 325.

In a skillet, cook sweet pepper, onion and garlic in hot oil about 4 minutes or until tender; remove from heat. Stir in lemon juice, rosemary and cayenne pepper. In a large bowl, toss bread cubes, onion mixture and parsley. Drizzle with enough broth to moisten; toss lightly to combine. Transfer mixture to a 1 1/2 qt casserole. Bake, covered, for 20 minutes. Uncover, bake about 20 minutes more or until heated through.
