Roasted Sausage, Peppers, Potatoes and Onions

Ingredients

  • 1 lb potatoes, peeled and cut into 1-inch chunks
  • 1 green pepper, cut into 1-inch pieces
  • 1 red pepper, cut into 1-inch pieces
  • 1 medium onion, cut into 1-inch chunks
  • 1/4 cup olive oil
  • salt and pepper
  • 1 lb Italian sausage

Directions

  1. Preheat oven to 450.

  2. Spread vegetables in a single layer in a shallow roasting pan. Drizzle with oil and sprinkle with salt and pepper. Stir.

  3. Roast the vegetables, stirring once or twice, for 45 minutes.

  4. Pierce each sausage in two or three places. Place the sausages on top of the vegetables. Bake for 15-30 minutes.
