Ingredients
- 3 large potatoes, peeled and cut into chunks
- salt and pepper
- 1 tbsp olive oil
- 1 tbsp butter, cut into pieces
- 1 shallot, chopped
- 10 blades of chives, chopped
- 3-4 sprigs thyme, chopped
- 1 cup chicken broth
- 4 oz herb goat cheese
Directions

Bring a medium pot of water to a boil. Add potatoes and salt. Boil potatoes 15 minutes or until fork tender.

Drain cooked potatoes and return empty pot to stove. Adjust heat to medium. Add olive oil then butter. When butter has melted, add shallots and saute, 2-3 minutes. Add chives and thyme, then potatoes to the pot. Mash potatoes, adding broth to achieve desire consistency. Season with salt and pepper.

Cut goat cheese into disks. Serve goat cheese on potatoes.
