Brown Sugar Snack Cake

Ingredients

  • 1 1/2 cups biscuit mix
  • 1 (16oz.) pkg. light brown sugar
  • 4 large eggs, lightly beaten
  • 1 tsp. vanilla extract
  • 1 cup flaked coconut
  • 1 cup chopped pecans (optional)

Directions

  1. Stir together biscuit mix and brown sugar. Add eggs, and beat with a spoon until blended. Stir in vanilla, coconut, and, if desired, pecans. Pour into a lightly greased pecans. Pour into a lightly greased 13 × 9-inch pan.
  2. Bake at 350 degrees for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
