Campfire Casserole

Ingredients

  • 1/2 lb. bacon
  • 2 lbs. potatoes, diced
  • 1 medium onion, diced
  • 1 tsp. salt, divided
  • 1/2 tsp. pepper, divided
  • 12 large eggs
  • 1 1/2 cups (6oz.) shredded Cheddar cheese (optional)
  • Salsa or Ketchup

Directions

  1. Cook bacon in a large skillet until crisp; remove bacon and drain on paper towels, reserving 2 Tbsp. drippings in skillet. Crumble bacon, and set aside.
  2. Saute potato, onion, 1/2 tsp. salt, and 1/4 tsp. pepper in hot drippings, stirring occasionally, 20 minutes or until browned.
  3. Whisk together eggs, remaining 1/2 tsp. salt, and 1/4 tsp. pepper; pour over potato in skillet. Cook over medium heat 4 minutes or until eggs are set, stirring if necessary. Sprinkle with bacon and, if desired, cheese. Serve with salsa or ketchup.
