Ingredients
- 1/4 lb smoked bacon, diced
- 2 oz unsalted butter
- 2 1/2 lbs Yukon Gold potatoes, scrubbed and cut into 1-inch pieces
- 4 tbsp chopped sage
- 1/2 cup milk
- salt and pepper
Directions

Cook the bacon in a small skillet until fat is rendered and bacon is browned and crisp.

Put the potatoes in a large pot with water to cover them by 1 inch and boil for 20 minutes. Drain potatoes well and return them to pot.

Add the butter, sage, milk and bacon to the pot. Mash potatoes well with a potato masher. Reheat them over medium; season well with salt and pepper.
