Mexican Chunk Vegetable Salad WITH Grilled Honey Lime Chicken Sandwiches

Ingredients
- Salad:
- 2 vine-ripe tomatoes, chopped
- 1/3 cucumber, chunked
- 1/2 medium red onion, chopped
- 1 red pepper, chunked
- 2 ribs celery, chopped
- 1 jalapeno, chopped
- 2 tbsp cilantro, chopped
- 2 tsp hot sauce
- juice of 2 limes
- 2 tbsp olive oil
- salt and pepper
- Chicken:
- juice of 1 lime
- 2 tbsp honey
- 1 tsp cumin
- 1 1/2 tbsp cilantro, chopped
- 2 tbsp olive oil
- 4 chicken breasts
- 1 tsp steak seasoning blend
- lettuce
- tomato
- red onion
- salsa
- 4 crusty rolls, split
- flavored tortilla chips
Directions

Salad:

Combine vegetables in a bowl. Sprinkle with cilantro. Dress salad with hot sauce, lime juice and olive oil. Season with salt and pepper.

Chicken:

Combine first 5 ingredients in a small bowl to make dressing. Sprinkle chicken with seasoning blend. Coat chicken in dressing and set aside for 10 minutes.

Grill chicken 6-7 minutes per side.

Slice chicken on an angle and pile on roll bottoms. Top with lettuce, tomato and onion. Spread salsa on roll tops.
