Mexican Chunk Vegetable Salad WITH Grilled Honey Lime Chicken Sandwiches

Ingredients

  • Salad:
  • 2 vine-ripe tomatoes, chopped
  • 1/3 cucumber, chunked
  • 1/2 medium red onion, chopped
  • 1 red pepper, chunked
  • 2 ribs celery, chopped
  • 1 jalapeno, chopped
  • 2 tbsp cilantro, chopped
  • 2 tsp hot sauce
  • juice of 2 limes
  • 2 tbsp olive oil
  • salt and pepper
  • Chicken:
  • juice of 1 lime
  • 2 tbsp honey
  • 1 tsp cumin
  • 1 1/2 tbsp cilantro, chopped
  • 2 tbsp olive oil
  • 4 chicken breasts
  • 1 tsp steak seasoning blend
  • lettuce
  • tomato
  • red onion
  • salsa
  • 4 crusty rolls, split
  • flavored tortilla chips

Directions

  1. Salad:

  2. Combine vegetables in a bowl. Sprinkle with cilantro. Dress salad with hot sauce, lime juice and olive oil. Season with salt and pepper.

  3. Chicken:

  4. Combine first 5 ingredients in a small bowl to make dressing. Sprinkle chicken with seasoning blend. Coat chicken in dressing and set aside for 10 minutes.

  5. Grill chicken 6-7 minutes per side.

  6. Slice chicken on an angle and pile on roll bottoms. Top with lettuce, tomato and onion. Spread salsa on roll tops.
