Ingredients
- 2 tbsp unsalted butter
- 2 medium shallots, minced
- 1 small onion, cut in half and thinly sliced
- 3 garlic cloves, minced
- 1 cup dark rum
- 3 cups beef stock
- 2 tbsp molasses
- 4- 8 oz strip steaks
- salt and pepper

In a saucepan, heat the butter over medium-high heat. Add the shallots, onion and garlic. Cook, stirring, until softened about 5 minutes. Add the rum and simmer until reduced to 1/3 cup. Add beef stock and bring to a boil. Reduce heat and whisk in molasses. Simmer until liquid is reduced to 2 cups.

Heat a grill. Season steaks with salt and pepper. Grill on both sides. To serve, place steaks on warmed plates and top with caramelized onion and its glaze.
