Stuffed Onions

Ingredients

  • 3/4 cup cooked farro
  • 1/2 cup cooked and crumbled Italian sausage
  • 1/2 cup crumbled feta
  • 1/4 cup finely chopped carrot
  • 1/4 tsp Italian seasoning
  • 1/4 tsp salt
  • 4 medium sweet onions
  • 1 cup chicken broth
  • 1/4 cup snipped fresh basil

Directions

  1. In a large bowl combine the cooked farro, cooked sausage, 1/4 cup feta, carrot, Italian seasoning and salt. Set aside.

  2. Peel and cut a thin slice from the end of each onion. Using a spoon, scoop out the inside of each onion, leaving a 1/4- to 1/2-inch shell. Stuff the onions with the sausage mixture, mounding as needed.

  3. Pour the chicken broth in slow cooker. Place the stuffed onions in the cooker; make sure each onion is sitting flat on the bottom of the cooker.

  4. Cover and cook on LOW 3 1/2-4 hrs. To serve, cut each onion in half. Top the onion halves with the remaining feta cheese and basil.
