Blue Cheese and Onion Yukon Golds

Ingredients

  • Nonstick cooking spray
  • 2 medium onions, thinly sliced
  • 1/2 cup chicken broth
  • 1 tsp garlic, minced
  • 4- 6 oz Yukon gold potatoes, cut in half lengthwise
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 oz crumbled blue cheese

Directions

  1. Coat slow cooker with cooking spray. In cooker, combine onions, broth and garlic, tossing until well coated. Place potatoes on top of onion mixture.

  2. Cover and cook on LOW 5 1/2-6 hrs.

  3. Remove potatoes; fluff each half with a fork.

  4. Stir salt and pepper into onion mixture in cooker. Divide onion mixture among potato halves. Sprinkle evenly with cheese.
