Orecchiette with Broccoli Rabe and Sausage

Ingredients

  • 1 bunch broccoli rabe, bottom 1-inch removed
  • 10 oz orecchiette pasta
  • 1/2 tbsp olive oil
  • 2 links uncooked Italian sausage
  • 4 garlic cloves, minced
  • 1/4 tsp red pepper flakes
  • 3/4 cup chicken stock
  • salt and pepper
  • Romano cheese

Directions

  1. Bring a large pot of salted water to a boil. Drop in the broccoli and cook for 3 minutes. Use tongs to remove and chop into 1/2-inch pieces. Return water to a boil. Cook pasta until al dente.

  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sausage and cook about 5 minutes, until lightly browned, then add the garlic and pepper flakes and saute another 3 minutes. Stir in broccoli and chicken stock and lower heat to simmer. Season with salt and pepper.

  3. Drain the pasta and toss immediately into the pan with the sausage and broccoli. Toss the pasta. Serve with grated cheese.
