Gnocchi with Prosciutto

Ingredients

  • 2 tbsp butter
  • 1/2 bunch asparagus, woody ends removed, chopped into 1-inch pieces
  • 3 oz prosciutto, sliced into thin strips
  • 1 cup chicken stock
  • salt and pepper
  • 12 oz packaged gnocchi
  • Parmesan

Directions

  1. Heat half the butter in a large skillet over medium heat. Add the asparagus and saute for 2-3 minutes, then stir in prosciutto and stock. Cook for 3-4 minutes, until asparagus is tender. Season with salt and pepper; keep warm.

  2. Cook the gnocchi in a large pot of boiling water, until they float to the top. Drain and add to skillet, along with 1 tbsp of butter. Cook together for 1 minutes. Serve with grated Parmesan.
