Ingredients
- 1/2 cup panko
- 1/4 cup crumbled blue cheese
- 2 tbsp chopped parsley
- 1 tsp chopped rosemary
- 1 tbsp olive oil
- 4 steaks
- salt and pepper
Directions

Preheat the oven to 450. Combine the breadcrumbs, cheese, parsley, and rosemary in a mixing bowl and set aside.

Heat the oil in a large cast-iron skillet over high heat. Season the steaks all over with salt and pepper. Sear the first side of the meat for 2 minutes, until well browned.

Flip the steaks and top with a quarter of the bread crumb mixture, using your fingers to gently press it into the meat. Transfer the steaks to the oven to finish cooking. The steaks should be done in 5-6 minutes. Let the steaks rest a few minutes before serving.
