Italian Noodle Bake

Ingredients
- 1 Tbsp. olive oil
- 1/2 cup chopped onion
- 3 cloves minced garlic
- 1 lb. spicy Italian sausage
- 3 Tbsp. tomato paste
- 1 (15oz.) can Italian-style diced tomatoes
- 8 oz. egg noodles
- 1/2 cup nonfat plain Greek yogurt
- 1 cup part-skim ricotta cheese
- 1 Tbsp. Italian seasoning
- 1/2 cup shredded low-fat mozzarella cheese or Italian cheese blend
Directions
- Preheat oven to 350 degrees.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, about 5 minutes. Add garlic and cook another minute. Push onion and garlic to the sides and add Italian sausage to the pan, breaking it apart with a spoon. cook until no pink remains. Add tomato paste and diced tomatoes, breaking tomatoes up with the spoon. Simmer while cooking noodles.
- Cook egg noodles according to package instructions. Drain and set aside.
- In a medium bowl, combine Greek yogurt and ricotta cheese. Stir in Italian seasoning. Spray a 13 × 9-inch baking dish with nonstick cooking spray. Add half the noodles to pan. Top with half the meat mixture, then half the cheese. Repeat layers. Bake 30 minutes or until cheese is melted.
