Italian Sausage Scramble

Ingredients
- 1/2 lb. Italian sweet sausage
- 2 Tbsp. cooking oil
- 1 cup potatoes, boiled, peeled and diced
- 1/2 medium onion, chopped
- 1/4 green pepper, chopped
- 1 cup tomatoes, peeled seeded and chopped
- 8 eggs, beaten
- 1/4 cup heavy cream
- salt to taste
- pepper to taste
- Italian bread, sliced thick, buttered and toasted
- oregano to taste
- Parmesan cheese
Directions
- Crumble sausage, removing casing if necessary. In a large skillet, fry sausage in oil until no longer pink. Add potatoes, onion and green pepper. Saute, stirring occasionally, until potatoes are brown and onions and pepper are soft. Add tomatoes and cook 1 minute. Combine eggs, cream, salt and pepper; stir into sausage mixture. Scramble over medium heat until eggs are set. Spoon mixture over the toast and sprinkle with oregano and cheese.
