Arugula Salad with Prosciutto Ham

Ingredients

  • 4 cups arugula
  • 8 slices thinly sliced prosciutto
  • Parmesan, shaved
  • croutons
  • Dressing:
  • 2 tsp Dijon
  • 2 tbsp fresh lemon juice
  • 2 tbsp sherry vinegar
  • 2/3 cup olive oil
  • salt and pepper

Directions

  1. In a small bowl, whisk together mustard, lemon juice and sherry vinegar. Gradually whisk in olive oil. Taste and season with salt and pepper.

  2. Divide arugula among plates. Drizzle with vinaigrette. Drape 2 slices of prosciutto over the greens, then garnish with Parmesan and croutons.
