Ingredients
- 4 cups arugula
- 8 slices thinly sliced prosciutto
- Parmesan, shaved
- croutons
- Dressing:
- 2 tsp Dijon
- 2 tbsp fresh lemon juice
- 2 tbsp sherry vinegar
- 2/3 cup olive oil
- salt and pepper
Directions

In a small bowl, whisk together mustard, lemon juice and sherry vinegar. Gradually whisk in olive oil. Taste and season with salt and pepper.

Divide arugula among plates. Drizzle with vinaigrette. Drape 2 slices of prosciutto over the greens, then garnish with Parmesan and croutons.
