Ingredients
- 1/2 cup plus 1 tbsp flour
- 1 cup yellow cornmeal
- 1 tbsp diced shallot
- 2 heaping tbsp cooked and finely chopped bacon
- 1 1/2 tsp chopped parsley
- 3 heaping tbsp white sweet corn
- 1 1/4 tsp baking powder
- 1 tsp sugar
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1 egg
- 3/4 cup milk
- 4 cups corn oil
Directions

In a large mixing bowl, combine all ingredients except the egg, milk and oil.

In a separate bowl, mix together egg and milk. Using a deep pot, preheat oil for frying to 350.

Add the dry ingredients to the egg mixture. Do not let the batter sit longer than 15 minutes.

Use two teaspoons and carefully spoon a ball about the size of a large olive. Fry in the oil until golden brown, about 3-4 minutes, turning once. Drain on paper towels and serve at once.
