Spinach and Lentil Tortellini Soup

Ingredients

  • 1/2 cup dry lentils
  • 2 cups coarsely shredded carrots
  • 1 large onion, finely chopped
  • 4 oz chopped Canadian bacon
  • 2 garlic cloves, minced
  • 2 tbsp snipped fresh basil
  • 1 1/2 tbsp snipped fresh thyme
  • 1/4 tsp pepper
  • 5 cups chicken broth
  • 1 cup water
  • 9 oz cheese-filled tortellini
  • 4 cups torn fresh spinach

Directions

  1. Rinse lentils; drain. Place lentils in slow cooker. Add the carrots, onion, bacon, garlic, and pepper. Pour broth and water over all.

  2. Cover and cook on LOW 6 1/2 to 7 hrs. Turn to HIGH. Stir in tortellini and cook 30 minutes more. To serve, stir in spinach and fresh basil and thyme.
