Ingredients
- 1/2 cup dry lentils
- 2 cups coarsely shredded carrots
- 1 large onion, finely chopped
- 4 oz chopped Canadian bacon
- 2 garlic cloves, minced
- 2 tbsp snipped fresh basil
- 1 1/2 tbsp snipped fresh thyme
- 1/4 tsp pepper
- 5 cups chicken broth
- 1 cup water
- 9 oz cheese-filled tortellini
- 4 cups torn fresh spinach
Directions

Rinse lentils; drain. Place lentils in slow cooker. Add the carrots, onion, bacon, garlic, and pepper. Pour broth and water over all.

Cover and cook on LOW 6 1/2 to 7 hrs. Turn to HIGH. Stir in tortellini and cook 30 minutes more. To serve, stir in spinach and fresh basil and thyme.
