Caramelized Onion Mayonnaise

Ingredients

  • For caramelized onion:
  • 2 extra-large sweet onions (about 3 lb.)
  • 1 (10 1/2oz.) can chicken or beef broth, undiluted
  • 1/4 cup butter or margarine
  • Caramelized Onion Mayonnaise:
  • 1 cup Caramelized Onions, chopped
  • 1 to 2 garlic cloves, minced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. For the caramelized onion:

  2. Cut onions in half; cut each half into 1/2-inch-thick slices.
  3. combine all ingredients in a 3 1/2 quart slow cooker. Cook, covered, at high 8 hours or until golden brown and very soft. Store onions in an air-tight container; refrigerate up to 2 weeks. or freeze up to 2 months, if desired.
  4. makes 2 cups

  5. For mayonnaise:

  6. Stir together all ingredients. Cover and chill at least 30 minutes. serve with fish, steamed shrimp, or as a sandwich spread.
  7. makes 2 cups
