Chicken and Mushrooms

Serves 4 people

Ingredients

  • 2 Tbsp. margarine or butter, divided
  • 4 skinless, boneless chicken breast halves
  • 1 1/2 cups broccoli florets
  • 1 1/2 cups sliced mushrooms
  • 1 (10 3/4 oz.) can condensed cream of chicken and broccoli soup
  • 1/4 cup milk
  • 2 Tbsp. Dijon-style mustard
  • 4 cups hot cooked medium egg noodles

Directions

  1. in large skillet over medium-high heat, heat half the margarine. Cook chicken 10 minutes or until browned. Remove and set aside.
  2. Reduce heat to medium. Add remaining margarine, broccoli and mushrooms. Cook, stirring frequently, until tender and liquid has evaporated.
  3. Add soup, milk and mustard; stir to combine. heat to a boil. Return chicken to pan. Cover and cook over low heat 5 minutes or until chicken is no longer pink.
  4. Serve with noodles.
