Ingredients
- 2 slightly beaten eggs
- 3/4 cup soft bread crumbs
- 1/2 cup tomato juice
- 2 tbsp snipped fresh parsley
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 garlic clove, minced
- 2 lbs ground beef
- 6- 1 oz thin slices cooked prosciutto
- 1 3/4 cups shredded mozzarella

In a large bowl combine the eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic. Stir in the ground beef, mixing well.

On foil, pat mixture into a 12×10- inch rectangle. Arrange the prosciutto slices on the meat, leaving a 3/4-inch border around all edges. Sprinkle 1 1/2 cups of the mozzarella cheese over the prosciutto. Starting from a short end, carefully roll up meat, using foil to lift; seal edges and ends. Place roll, seam side down, in a 13×9×2-inch baking pan.

Bake in 350 oven for 1 1/4 hrs or until temperature reaches 170 and juices run clear. Sprinkle the remaining shredded mozzarella over roll. Return to over about 5 minutes or until cheese melts.
