Ingredients
- 1 medium yellow onion
- 1 1/2 cups fresh green chiles, minced
- 4 lb beef chuck roast
- 1 envelope dry taco seasoning
- 1 tbsp white vinegar
- 2 tsp red pepper sauce
- 1/2 tsp garlic salt
Directions

Peel the onion and chop into 1/4-inch pieces. Mince the green chiles with a sharp paring knife. Add all ingredients to the slow cooker. Cover and cook on LOW 9 hrs.

Remove meat and shred with a fork. Return meat to slow cook and stir into the other ingredients. Cover and cook on LOW for 1 additional hr.

Serve with tortillas and taco toppings.
