Super Taco Filling

Ingredients

  • 1 medium yellow onion
  • 1 1/2 cups fresh green chiles, minced
  • 4 lb beef chuck roast
  • 1 envelope dry taco seasoning
  • 1 tbsp white vinegar
  • 2 tsp red pepper sauce
  • 1/2 tsp garlic salt

Directions

  1. Peel the onion and chop into 1/4-inch pieces. Mince the green chiles with a sharp paring knife. Add all ingredients to the slow cooker. Cover and cook on LOW 9 hrs.

  2. Remove meat and shred with a fork. Return meat to slow cook and stir into the other ingredients. Cover and cook on LOW for 1 additional hr.

  3. Serve with tortillas and taco toppings.
