Mexican Green Chili Burros

Ingredients

  • 2 lb beef rump roast
  • 1 cup chopped yellow onions
  • 10 oz can diced green chiles
  • 16 oz can tomato sauce
  • 1 packaged taco seasoning mix
  • 1 tbsp oregano
  • 1 tsp garlic powder
  • 8 flour tortillas
  • 1/2 cup sour cream
  • 1 large green onion, diced
  • 1/4 cup chopped black olives

Directions

  1. Add the meat to slow cooker. Peel and chop onions into 1/4-inch pieces. Add all ingredients on top of the meat. Cook on LOW 7 hrs. Remove the meat and shred using 2 forks. Return the meat to the slow cooker and stir together all the ingredients. Cook on LOW for 1-3 hrs.

  2. Serve on flour tortillas that have been warmed in a 250 oven for 10 minutes. Top with sour cream, diced green onions and olives.
