Chile Mashed Potatoes

Ingredients

  • 6 large red potatoes, peeled and quartered
  • 2 carrots, finely chopped
  • 2 (4.5oz.) cans chopped green chiles, drained
  • 1/2 cup sour cream
  • 1/4 cup butter or margarine, softened
  • 1 tsp. salt
  • 3/4 tsp. pepper
  • 1/4 to 1/2 tsp. ground cumin

Directions

  1. Cook potatoes in boiling salted water to cover 25 minutes; add carrots, and cook 5 minutes or until potatoes are tender. Drain; stir in chiles.
  2. Beat potato mixture, sour, cream, and remaining ingredients at medium speed with an electric mixer until smooth.
