Ingredients
- 6 large red potatoes, peeled and quartered
- 2 carrots, finely chopped
- 2 (4.5oz.) cans chopped green chiles, drained
- 1/2 cup sour cream
- 1/4 cup butter or margarine, softened
- 1 tsp. salt
- 3/4 tsp. pepper
- 1/4 to 1/2 tsp. ground cumin
Directions
- Cook potatoes in boiling salted water to cover 25 minutes; add carrots, and cook 5 minutes or until potatoes are tender. Drain; stir in chiles.
- Beat potato mixture, sour, cream, and remaining ingredients at medium speed with an electric mixer until smooth.
