Chocolate Pixies

Ingredients

  • 4 (1oz.) unsweetened chocolate squares
  • 1/4 cup unsalted butter
  • 4 large eggs
  • 2 cups sugar
  • 2 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup chopped pecans, toasted (optional)
  • 1/2 cup powdered sugar

Directions

  1. Microwave chocolate and butter in a large glass bowl at high 1 1/2 to 2 minutes or until melted, stirring once.
  2. Add eggs, 1 at a time, beating at medium speed with an electric mixer after each addition. Gradually add sugar, beating until blended. Stir in vanilla.
  3. Combine flour, baking powder, and salt. Gradually add to chocolate mixture, beating at low speed until blended. Stir in pecans, if desired. Cover and chill 2 hours.
  4. Shape dough into 1-inch balls; roll in powdered sugar, and place on lightly greased baking sheets.
  5. Bake at 300 degrees for 15 to 18 minutes. Remove to wire racks to cool.
