Classic Chocolate Chips Cookies

Ingredients

  • 2 Tbsp. ground flaxseed
  • 1/3 cup warm water
  • 2 1/4 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup coconut oil, softened, but not melted
  • 3/4 cup granulated sugar
  • 3/4 cups packed dark brown sugar
  • 1 Tbsp. vanilla extract
  • 2 cups dairy-free semisweet chocolate chips

Directions

  1. Heat oven to 350 degrees. Line 2 baking sheets with nonstick baking mats or parchment paper.
  2. In the bowl of a stand mixer or large mixing bowl, combine the flaxseed and water. Mix on lowest speed until well emulsified. Let stand several minutes.
  3. meanwhile, in a medium bowl, combine the flour, baking soda and salt. Set aside.
  4. To the bowl with the flaxseed mixture, add the coconut oil, sugars and vanilla extract
  5. and beat until well combined.

  6. Gradually add flour mixture. Stir in chocolate chips. Shape dough into walnut-size balls or drop by rounded tablespoons onto the prepared baking sheets.
  7. Bake 9 to 11 minutes or until golden brown. Cool on baking sheets for 10 minutes, then transfer to wire racks to cool completely. Repeat with remaining dough.
