Classic Chocolate Chips Cookies

Ingredients
- 2 Tbsp. ground flaxseed
- 1/3 cup warm water
- 2 1/4 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 cup coconut oil, softened, but not melted
- 3/4 cup granulated sugar
- 3/4 cups packed dark brown sugar
- 1 Tbsp. vanilla extract
- 2 cups dairy-free semisweet chocolate chips
Directions
- Heat oven to 350 degrees. Line 2 baking sheets with nonstick baking mats or parchment paper.
- In the bowl of a stand mixer or large mixing bowl, combine the flaxseed and water. Mix on lowest speed until well emulsified. Let stand several minutes.
- meanwhile, in a medium bowl, combine the flour, baking soda and salt. Set aside.
- To the bowl with the flaxseed mixture, add the coconut oil, sugars and vanilla extract

and beat until well combined.
- Gradually add flour mixture. Stir in chocolate chips. Shape dough into walnut-size balls or drop by rounded tablespoons onto the prepared baking sheets.
- Bake 9 to 11 minutes or until golden brown. Cool on baking sheets for 10 minutes, then transfer to wire racks to cool completely. Repeat with remaining dough.
