Kohlrabi Salad with Cilantro and Lime

Ingredients

  • 3 (4-inch) bubs kohlrabi
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/2 jalapeno, minced, optional
  • Zest and juice from 1 orange, divided use
  • Zest and juice from 1 lime, divided use
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1/2 tsp. kosher salt
  • 1 Tbsp. rice wine vinegar

Directions

  1. Trim and peel kohlrabi. Cut into 1/4-inch matchsticks or julienne in food processor.
  2. Place in a large bowl with cilantro, green onions, jalapeno, orange zest and lime zest.
  3. In a small bowl, whisk together olive oil, orange juice, lime juice, honey, salt and vinegar. Toss with salad. Refrigerate until serving. Can be made 1 day ahead.
