Lemon and Garlic Roast Pork

Ingredients

  • 3 lb boneless pork loin roast
  • 3/4 tsp grated lemon rind
  • 3 garlic cloves, minced
  • 1 can chicken broth

Directions

  1. Trim fat from pork. Combine lemon rind and garlic and rub evenly over pork. Place pork in a casserole dish and add broth. Bake at 400 for 30 minutes. Turn pork over and bake an additional 30 minutes or until pork is cooked thoroughly. Discard broth and serve.
