Cracked Pepper Salmon Fillets

Ingredients

  • 2 Tbsp. chopped fresh parsley
  • 1 garlic clove, minced
  • 1 tsp. coarsely ground pepper
  • 1 tsp. blackened seasoning
  • 2 (6oz.) salmon fillets
  • Vegetable cooking spray
  • Green Tomato-Cranberry Chutney

Directions

  1. Combine first 4 ingredients in a shallow dish. coat both sides of fillets with parsley mixture.
  2. Cook fillets, skin side down, in a large nonstick skillet coated with cooking spray over medium-high heat 10 minutes. Cover and cook 5 minutes or until fish flakes with a fork. Serve with Green Tomato-Chutney, ( homemade or bought).
