Creamy Pan-Braised Fennel

Ingredients

  • 4 large fennel bulbs
  • 1 1/2 cups whipping cream
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. ground nutmeg
  • 1/4 cup fine, dry breadcrumbs
  • 1/4 cup shredded Parmesan cheese
  • 1 1/2 Tbsp. butter or margarine

Directions

  1. Trim bases from fennel bulbs; cut into eighths, reserving fronds for another use. Arrange fennel in a lightly greased 11 × 7-inch baking dish.
  2. Whisk together whipping cream and next 3 ingredients, and pour over fennel slices. Sprinkle fennel slices with breadcrumbs and Parmesan cheese; dot with butter.
  3. Bake, covered, at 425 degrees for 20 minutes. Uncover and bake 20 more minutes or until fennel is tender and yields when a knife is inserted into the thickest slices. Serve immediately.
