Ingredients
- 14.5 oz Canned Black Beans
- Red Onion
- Red Bell Pepper
- Green Onion
- 1 lb Ground Beef
- 1 tbsp Taco Seasoning
- 4 oz Salsa
- 2 oz Queso Fresco
- 6 Corn Tortillas

Thoroughly rinse produce and pat dry. Rinse and drain the black beans. Chop onion, setting aside 1/4 cup. Slice red bell pepper into long thin strips. Dice green onion. Heat a medium pan over medium heat. Add 1 Tbsp. olive oil, then add bell pepper and sauté until soft, about 5 minutes. Remove from pan and reserve.

Using the same pan, add beef and cook over medium heat until it begins to brown, about 3-4 minutes. Use a wooden spoon to break beef up into small pieces as it cooks. Add chopped onion and cook for 2 minutes. Then add taco seasoning, salsa, and black beans. Stir together and cook for another 2 minutes.

Crumble the queso fresco. Assemble 2-3 tacos per person. Scoop a generous amount of beef and black bean mixture onto tortillas and top with sautéed bell peppers, crumbled queso fresco, and green onion.
