Decadent Caramel Apple Cheeseccake

- 1 1/2 cups vanilla wafer crumbs
- 1/4 cup sugar
- 1/4 cup butter, melted
- 2 (8oz.) pkg. cream cheese, softened
- 2 Tbsp. all-purpose flour
- 1 can Eagle Brand Caramel Flavored Sweetened Condensed milk, divided
- 3 eggs
- 1/2 cup frozen apple juice concentrate, thawed divided
- 2 medium peeled Red Delicious apples, chopped
- 3 Tbsp. butter
- 1/4 Tbsp. apple pie spice, plus additional for garnish
- 1 tsp. cornstarch
Directions
- Heat oven to 350 degrees. For crust, combine wafer crumbs, sugar and melted butter in medium bowl until evenly moistened. Press into bottom and halfway up sides of 9-inch spring form pan.
- Beat cream cheese and flour in large bowl with electric mixer on medium speed until fluffy. Reserve 2 Tbsp. sweetened condensed milk for topping. Beat remaining sweetened condensed milk, eggs and 1/4 cup apple juice concentrate into cream cheese mixture until blended. Pour over crust. Bake 45 to 50 minutes or until almost set in center. Cool completely on wire rack.
- Cook apples in butter in large skillet over medium heat until thickened. Cool 10 minutes. Spoon over cheesecake. Chill. Drizzle with reserved sweetened condensed milk just before serving. Sprinkle with apple pie spice.
