Piggylicious Bacon Cupcake

Ingredients

  • Cake:
  • Favorite yellow cake mix
  • 12 slices bacon, cooked crisp and chopped fine
  • Equal amt of bacon fat to replace oil in mix
  • Maple Cream Cheese Icing:
  • 8 oz cream cheese
  • 1/4 cup butter, softened
  • 1 tbsp real maple syrup, more to taste
  • 2 cups confectioner's sugar
  • Crushed pretzel twists, for garnish

Directions

  1. For Cake:

  2. Follow cupcake directions for cake, replacing oil with bacon fat. Fold in bacon. Bake according to instructions.

  3. Maple Cream Cheese Frosting:

  4. In a mixing bowl, cream together cream cheese and butter with paddle attachment. Mix in maple syrup.

  5. Gradually add in sugar until combined.

  6. Frost cupcakes and garnish with crushed pretzels.
