Cream Cheese Potatoes

Ingredients

  • 2 tbsp minced onion
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 8 medium potatoes, scrubbed and sliced
  • 8 oz package cream cheese, cut into cubes

Directions

  1. Cook potatoes in boiling water for about 30 minutes or until tender and then cut into slices.

  2. Lightly grease slow cooker. In small bowl, combine onion, garlic, salt and pepper. Layer 1/4 of sliced potatoes in bottom of slow cooker. Sprinkle with 1/4 of the seasonings. Layer with 1/3 of cream cheese cubes. Continue layering process, ending with a layer of potatoes then sprinkle with seasonings. Cover and cook on LOW 6-8 hrs. In last hr of cooking, stir potatoes to distribute cream cheese. Serve when potatoes are tender.
