Creamy Blue Cheese Rice with Spinach and Walnuts

Ingredients

  • 1 98oz.) pkg. cream cheese, softened
  • 1/4 cup water
  • 1 (10oz.) pkg. frozen chopped spinach thawed and undrained
  • 1 (4oz.) pkg. crumbled blue cheese
  • 1/4 tsp. black pepper
  • 3 cups cooked rice
  • 1/2 cup toasted chopped walnuts

Directions

  1. In a large skillet on medium, heat cream cheese and water; cook and stir 3 or 4 minutes or until cheese is melted.
  2. Add spinach, blue cheese and pepper; cook 2 minutes.
  3. Add rice; cook 3 to 5 minutes or until heated through. Remove from heat. Stir in walnuts and serve.
