Itlian White Beans

Ingredients

  • 2 Tbsp. olive oil
  • 2 cups finely chopped onion
  • 1/4 tsp. crushed red pepper
  • 8 cloves garlic minced
  • 2 bay leaves
  • 2 Tbsp. water, plus more if needed
  • 2 (15 oz.) cans cannellini beans, rinsed
  • 4 tsp. white wine vinegar
  • 1/4 tsp. black pepper

Directions

  1. In a large skillet, heat oil on medium-high. Add onion; cook 6 minutes. Add red pepper, garlic and bay leaves; cook 4 minutes. Stir in water and beans. Cook 3 minutes or until thoroughly heated. Stir in vinegar salt and pepper. Discard bay leaves and serve. If beans are too dry, thin with additional water.
