Mulligatawny Soup

Ingredients

  • 16 cups water
  • 6 cups of chicken stock
  • 2 potatoes
  • 2 carrots
  • 2 stalks celery
  • 1 med. onion
  • 1 cup frozen corn
  • 2/3 cup canned roasted red pepper
  • 1/2 c tomato sauce
  • 1/2 c shelled pisatchios
  • 1/2 c roast cashews
  • 1/2 c parsley
  • 1/4 c lemon juice
  • 1/4 c butter
  • 3 T sugar
  • 1/2 t curry powder
  • 1/2 t pepper
  • 1/4 t thyme
  • 1 bay leaf
  • dash margoram
  • dash nutmeg

Directions

  1. combine all

  2. bring to boil, simmer for 2-3 hours
