Sweet Potatoes with Maple-Ginger Cream

Ingredients
- 4 medium-size sweet potatoes
- 1/2 cup sour cream
- 2 Tbsp. maple syrup
- 1/4 tsp. salt
- 1/4 tsp. ground ginger
- 1/4 cup chopped pecans toasted
Directions
- Pierce sweet potatoes several times with a fork, and place on a baking sheet.
- Bake at 375 degrees for hour.
- Stir together sour cream and net 3 ingredients. Spoon over split baked potatoes, and sprinkle with pecans.
