Sweet Potatoes with Maple-Ginger Cream

Ingredients

  • 4 medium-size sweet potatoes
  • 1/2 cup sour cream
  • 2 Tbsp. maple syrup
  • 1/4 tsp. salt
  • 1/4 tsp. ground ginger
  • 1/4 cup chopped pecans toasted

Directions

  1. Pierce sweet potatoes several times with a fork, and place on a baking sheet.
  2. Bake at 375 degrees for hour.
  3. Stir together sour cream and net 3 ingredients. Spoon over split baked potatoes, and sprinkle with pecans.
