Super-Sauced Turkey Breast

Ingredients

  • 2 Tbsp. vegetable oil
  • 1 to 1 1/4 lb. turkey breast slices
  • salt to taste
  • pepper to taste
  • 1/2 cup chicken broth or dry white wine
  • 1/2 cup whipping cream
  • 2 tsp. Dijon-style mustard
  • 1 Tbsp. drained capers

Directions

  1. In microwave, preheat 10-inch browning skillet on high power 4 to 6 minutes. Add oil and half of turkey slices. Cook on high power 30 seconds on each side. Transfer to warmed platter. Preheat skillet again 2 1/4 to 3 minutes. Repeat browning step with remaining turkey slices. Season to taste with salt and pepper. Cover and keep warm. In microwave-safe 3 cup bowl, just to a boil, about 1 to 2 minutes, stirring every 30 seconds. Stir in cream, mustard, capers, and juices that have collected on turkey platter. Cook on high power, uncovered, 8 to 10 minutes, stirring every 1 1/4 tp 1 1/2 minutes, until sauce has come to boil and has thickened enough to coat back of metal spoon. Spoon sauce over turkey slices.
