Superb Chilled Lemon Mousse

A refreshing dessert
Nice served with raspberry couli, icecream or yoghurt

Ingredients

  • 1 T gelatin
  • 1/4 C water
  • 3 eggs, separated
  • grated rind of 2 lemons
  • juice of 2 lemons (about 1/2 cup)
  • 1 C caster sugar
  • 1 C cream, whipped

Directions

  1. Sprinkle gelatin over water and let it swell.

  2. Dissolve this in microwave for 15 seconds on high – do not overheat, or gelatin will go ‘stringy’.

  3. Beat egg yolks with lemon rind, juice and sugar in a bowl over simmering water, until thick and pale.

  4. Beat egg whites until stiff, but not dry.

  5. Fold beaten whites and whipped cream into the creamy yolk mixture.

  6. Place into serving bowl, or individual dessert glasses and chill at least 4 hours before serving.
