Ingredients
- 6 oz whole wheat penne
- 4 oz pancetta
- 2 garlic cloves
- 1/2 oz fresh basil
- 1/4 cup Parmesan
- 1 can diced tomatoes
- 1 tsp chili flakes
- 1/2 tbsp sugar
- 1 tsp olive oil
Directions

Boil a large pot of salted water. Finely minced the garlic and tear the basil leaves into small pieces.

Heat a tsp of oil in a pan on medium heat. Fry off the pancetta until it is crisy around the edges. Pour out the excess oil before moving on to the next step.

Add in the diced garlic and cook everything together for a minute until the garlic is fragrant. Add a pinch of chili flakes, or as much as you dare.

Add in the tomatoes, sugar, and salt and pepper to taste. Cook on medium-low heat for around 10 minutes until you have a nice thick sauce.

Cook you penne in the boiling water with a 1/2 tsp of salt for around 10 minutes.

Once the penne is cooked, drain and then stir it into your sauce. Stir in the Parmesan.

Serve with your fresh basil leaves.
