Beef with Green Peppers and Tomatoes

Ingredients
- 2 Tbsp. oil
- 1 clove garlic, peeled and crushed
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1/2 tsp. peeled and minced fresh gingerroot
- 1 lb. round steak, fat trimmed, thinly sliced and cut in 1 1/2 inch long strips
- 1/4 cup soy sauce
- 1/2 tsp. sugar
- 2 green peppers, cored, seeded and cut in thin 1 1/2-inch long strips
- 2 tomatoes, cored and quartered
- 3 Tbsp. cornstarch mixed with 1/4 cup cold water
- hot cooked rice
Directions
- Heat oil in wok until hot. Add garlic salt, pepper and gingerroot; stir-fry 2 minutes.

Add soy sauce, sugar, green peppers; cornstarch mixture; stir-fry until sauce thickens slightly. Serve immediately with hot cooked rice.
