Warm Potato Salad with Herb Dressing

Ingredients

  • 2 1/4 lb waxy potatoes
  • 6 tbsp olive oil
  • Juice of 1 lemon
  • 1 garlic clove, finely chopped
  • 2 tbsp chopped fresh herbs, parsley, basil or thyme
  • salt and pepper
  • basil leaves, to garnish

Directions

  1. Cook the potatoes in their skins in boiling salted water, or steam them until tender.

  2. Meanwhile make the dressing. Mix together olive oil, lemon juice, garlic, herbs and season the mixture thoroughly.

  3. Drain the potatoes and leave to cool slightly. When they are cool enough to handle, peel them. Cut the potatoes into chunks and place in a large bowl.

  4. Pour the dressing over the potatoes while they are still warm and mix well. Serve at once, garnished with basil leaves and black pepper.
