Fried Catfish

Ingredients
- 5 large eggs
- 1 cup milk
- 1 tsp. salt
- 1 tsp. pepper
- 1 (1 lb.) pkg. saltines
- 8 catfish fillets (3 1/2 to 4 lbs.)
- Vegetable oil
Directions
- Whisk together first 4 ingredients; set aside. Process crackers in a food processor until finely crushed.
- Dip fish in egg mixture; dredge in cracker crumbs.
- Pour oil to a depth of 5 inches in a Dutch oven; heat to 375 degrees. Fry fish, in batches, 4 to 6 minutes on each side or until fish flakes with a fork. Drain on paper towels.
