Ingredients
- 2 cups sifted all-purpose flour
- 1 tsp. baking soda
- 3 Tbsp. sugar
- 3/4 tsp. salt
- 2 eggs, well beaten
- 1/4 cup vinegar
- 1 3/4 cups sweet milk
- 1/4 cup shortening
Directions
- Sift flour, baking soda, sugar and slat together.
- Combine egg, vinegar milk, and shortening

and mix well.
- Add to dry ingredients and stir only until smooth.
- Pour batter from tip of large spoon or from pitcher onto large frying pan or griddle.
- When underside is browned and before bubbles burst on top, turn and brown second side.

Variation:
- Apple Pancakes- Add 1 vup grated raw apples.
- Blueberry pancakes- Add 1/2 up well-drained blueberries
