Featherweight Pancakes

Ingredients

  • 2 cups sifted all-purpose flour
  • 1 tsp. baking soda
  • 3 Tbsp. sugar
  • 3/4 tsp. salt
  • 2 eggs, well beaten
  • 1/4 cup vinegar
  • 1 3/4 cups sweet milk
  • 1/4 cup shortening

Directions

  1. Sift flour, baking soda, sugar and slat together.
  2. Combine egg, vinegar milk, and shortening
  3. and mix well.

  4. Add to dry ingredients and stir only until smooth.
  5. Pour batter from tip of large spoon or from pitcher onto large frying pan or griddle.
  6. When underside is browned and before bubbles burst on top, turn and brown second side.
  7. Variation:

  8. Apple Pancakes- Add 1 vup grated raw apples.
  9. Blueberry pancakes- Add 1/2 up well-drained blueberries
  10. makes about 20 medium pancakes
